Sausage spirals with grilled bread and tomatoes

This is needed
for 4 people
Dough
- 250 g white flour
- 0.75 tsp salt
- 1 sprig rosemary
- 0.13 cube yeast (approx. 5 g)
- 1.5 dl water
- 1 tbsp olive oil
Tomatoes
- 1 red onion
- 450 g tomato
- 1 garlic clove
- 1 red chilli pepper
- 2 tbsp olive oil
- 2 tbsp red wine
- 2 sprigs rosemary
- 1 pinch smoked paprika
Grilled bread
- 1 tbsp olive oil
Charcoal/gas/electric grill

- 4 sausage spirals (approx. 130 g each)
- 4 sprigs basil

And that's how it's done
Dough
Finely chop the rosemary, place in a bowl with the flour, salt and yeast. Pour in the water and oil, mix.
Knead for approx. 10 mins. to create a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1½ hrs. until doubled in size.
Tomatoes
Halve the tomatoes or cut into segments. Thinly slice the onion and garlic. Deseed and roughly chop the chilli pepper, place everything in an unperforated grill tray.
Add the oil, wine, rosemary and paprika, mix.
Grilled bread
Divide the dough into 4 portions, shape into balls, flatten by hand on a lightly floured surface, brush with oil.
Charcoal/gas/electric grill
Cover and grill the tomatoes in the grill tray over/on a medium heat (approx. 200 °C for approx. 30 mins. Remove the tomatoes from the grill. Grill the sausage spirals for approx. 5 mins. on each side, grill the bread for approx. 3 mins. on each side. Salt the tomatoes, tear the basil leaves and use as garnish. Serve the tomatoes with the sausage spirals and grilled bread.
