In a bowl, mix the mustard with all the other ingredients up to and including the salt. Roughly chop the chives using scissors and mix in.
Peel the cucumber, cut in half lengthwise, scoop out the seeds with a spoon. Cut the cumber into slices. Quarter the cherry tomatoes and apricots.
Remove the lettuce leaves, wash thoroughly, add all of the ingredients to the dressing along with the mozzarella balls, mix.
To toast the seeds
Toast the seeds in a non-stick frying pan without adding any oil, leave to cool. Sprinkle the seeds on top of the salad.
