Place the egg whites and salt in a bowl,beat until stiff using the whisk on a mixer, gradually add the icing sugar, continue to beat until the egg whites turn glossy.
Mix the almonds and cinnamon, add to the egg white mixture, combine to form a dough using a rubber spatula.
Roll out the dough in batches between two sheets of baking paper to approx. 1 cm thick, chill for approx. 30 mins. Cut out the biscuits, dipping the cutter in sugar each time. Place the biscuits on a baking tray lined with baking paper.
Approx. 5 mins. in the centre of an oven preheated to 240°C. Remove from the oven, leave to cool completely on a rack.
Mix the icing sugar with the lemon juice. Dip the surface of the biscuits in the icing,allow to dry on a rack for approx. 30 mins. Pipe little faces on the snowflakes using writing icing.
