  • 400 g sweet potatoes, peeled, diced
  • salted water, boiling
Topping
  • 2 tbsp olive oil
  • 100 g chorizo, peeled, diced
  • 0.25 bunch sage
  • 0.25 tsp salt
  • 0.5 lime, the whole juice

Mash
Cook the sweet potatoes in salted water for approx. 20 mins. until soft, drain, mash with a fork or potato masher.
Topping
Heat the oil in a frying pan. Stir fry the chorizo and sage for approx. 5 mins. until crispy. Drizzle the chorizo, sage, oil and lime juice over the mash, season with salt.
