  • 2 dl red wine
  • 1 tbsp orange blossom honey
  • 1 organic orange, grated zest and the juice
  • 0.25 tsp gingerbread spice
To serve
  • 60 g butter biscuit, quartered
  • 240 g vanilla cream, stirred until smooth
  • 2 oranges, segmented
  • 8 candied orange peel, finely chopped
  • 4 glasses, each approx. 150 ml

And that's how it's done
Combine the wine, honey, orange zest and juice with the gingerbread spice, pour into a wide stainless steel bowl. Freeze for approx. 5 hrs., scrape the mixture approx. 5 times with a fork until grainy and frozen.
To serve
Layer the vanilla custard alternately in the glasses with the galettes and the orange segments. Scrape the granita thoroughly, serve on top, scatter with the orangettes, serve immediately.
