  • 140 g shelled ground almonds
  • 100 g sugar
  • 5 drops bitter almond extract
  • icing sugar to dust
  • 1 fresh egg whites
  • 2 tbsp lemon juice
  • 3 tbsp icing sugar
  • 500 g strawberries, cut into segments

And that's how it's done
Mix the almonds and sugar in a bowl. Add the bitter almond flavouring, stir in the egg white. With wet hands, shape into walnut-sized balls. Place the balls on an oven tray lined with baking paper, dust with icing sugar. Press lightly with 3 fingers on the Mamaretti to create fine cracks on the surface. Bake for approx. 10 mins. in the centre of an oven preheated to 200°C. Remove from the oven, allow to cool on a cooling rack.
Combine the icing sugar and lemon juice in a bowl, mix well. Add the strawberries, mix together, cover and leave to steep for approx. 30 mins. Serve the strawberries with the Mamaretti.
