Cook the rice in salted water until almost soft. Drain the rice, cover and keep warm.
Heat the oil in a non-stick frying pan. Stir fry the pineapple, pepper and apple for approx. 2 mins., add the curry and stir fry for approx. 1 min. Pour in the coconut milk, bring to the boil while stirring, reduce the heat and simmer for approx. 5 mins., season.
