  • 2 tbsp tomato puree
  • 1 garlic clove, finely chopped
  • 1 onions, finely chopped
  • 1 glass roasted peppers in oil (approx. 290 g), drained, cut into strips
  • 250 g precooked basmati rice (e.g. Uncle Ben's Express)
  • 0.5 tsp salt
  • 1 tbsp lemon juice
  • 100 g feta, crumbled
  • a little pepper
  • 4 sprigs coriander, leaves torn off

Heat the oil in a pan. Sauté the onion and garlic. Add the tomato puree and rice, cook briefly. Add the pepper and lemon juice, cover and continue to cook for approx. 3 mins., season. Mix the feta and coriander into the rice.
