- 1 tbsp olive oil
- 2 tbsp tomato puree
- 1 garlic clove, finely chopped
- 1 onions, finely chopped
- 1 glass roasted peppers in oil (approx. 290 g), drained, cut into strips
- 250 g precooked basmati rice (e.g. Uncle Ben's Express)
- 0.5 tsp salt
- 1 tbsp lemon juice
- 100 g feta, crumbled
- a little pepper
- 4 sprigs coriander, leaves torn off

And that's how it's done
Rice
Heat the oil in a pan. Sauté the onion and garlic. Add the tomato puree and rice, cook briefly. Add the pepper and lemon juice, cover and continue to cook for approx. 3 mins., season. Mix the feta and coriander into the rice.
