Basil dressing
  • 2 tbsp herbal vinegar
  • 3 tbsp olive oil
  • 180 g plain yoghurt
  • 0.5 bunch basil, roughly chopped
  • 0.5 tsp salt
  • a little pepper
  • 500 g cherries, halved, pitted
  • 400 g cherry tomatoes, quartered
  • 200 g fennel, very thinly sliced
  • 2 pinches salt
  • a little pepper
To garnish
  • 1 burrata (approx. 150 g)
  • 40 g pine nuts, roasted

Basil dressing
Place the vinegar in a measuring cup along with all the other ingredients up to and including the basil, puree, season.
Plate up the cherries, tomatoes and fennel, season. Top with the basil dressing.
To garnish
Tear the burrata, place on top of the salad, sprinkle with the pine nuts.
