Lamb's lettuce salad with salsify

This is needed
for 4 people
Salsify
- 500 g salsify, peeled, cut into sticks approx. 8 cm long
- salted water, boiling
- 140 g bacon strips

- 1 tsp mustard
- 1 tbsp olive oil
- 2 tbsp apple vinegar
- 3 tbsp plain yoghurt
- 0.5 tsp salt
- a little pepper
- 1 red-skinned apple, diced
- 130 g lambs' lettuce
- 1 tbsp pumpkin seeds, toasted, coarsely chopped

And that's how it's done
Salsify
Simmer the salsify in boiling salted water for approx. 15 mins., drain. Wrap the salsify in bacon, fry for approx. 5 mins. all over in a non-stick frying pan.
Salad
Combine the mustard, vinegar, oil and yoghurt, season. Add the salad, mix, serve with the salsify. Scatter the apple and pumpkin seeds on top.
