Lamb's lettuce with apple and celeriac dressing

- 3 tbsp apple vinegar
- 0.5 tbsp mustard
- 4 tbsp rapeseed oil
- 1 tbsp mayonnaise
- 1 tsp liquid honey
- 50 g low-fat quark
- 0.25 tsp salt
- 75 g celeriac, very thinly sliced
- a little pepper
- 1 red-skinned apple, diced
- 100 g lambs' lettuce
- 1 tbsp pumpkin seeds, toasted, roughly chopped

And that's how it's done
In a bowl, whisk the mustard with all the other ingredients up to and including the quark, season, set aside 4 tbsp of the dressing. Mix the celeriac and apple into the remaining dressing, leave to infuse for approx. 30 mins. Plate up the apple & celeriac salad together with the lamb's lettuce, drizzle the reserved dressing over the lamb's lettuce. Sprinkle with pumpkin seeds.
