Mix all the ingredients in a bowl, spread on a baking tray lined with baking paper. Roast for approx. 30 mins. in the centre of an oven preheated to 200°C. Allow to cool slightly.
Plate up the roasted vegetables. Top with the tomatoes and all the other ingredients up to and including the rocket.
In a bowl, mix the coconut yoghurt with all the other ingredients up to and including the dukkah, drizzle on top of the salad.
