Bring the stock and turmeric to the boil, add the millet, cover and simmer for approx. 15 mins. Remove the pan from the heat, cover and allow to absorb for approx. 5 mins., rinse, drain and transfer to a bowl.
Mix the balsamic and olive oil in a large bowl, season. Add the millet, rocket, pepper and mango. Sprinkle with coconut flakes.
