  • 2 tsp honey mustard
  • 3 tbsp olive oil
  • 3 tbsp white balsamic vinegar
  • 0.5 tsp pepper
  • 0.5 tsp salt
  • 1 shallot, cut into thin rings
  • 250 g mini cucumbers, in slices
  • 5 nectarines, cut into wedges
  • 1 tin white beans (approx. 400 g), rinsed, drained
  • 0.5 bunch basil, torn into pieces
  • 50 g goats' cheese, chips peeled off with a peeler
  • 2 tbsp hazelnuts, coarsely chopped, roasted

Combine the mustard, balsamic and oil, season. Mix in the shallot and leave to infuse for approx. 15 mins.
Add the cucumber, nectarines and beans to the dressing, mix. Scatter the basil, cheese and nuts on top.
