Gazpacho
  • 600 g watermelon, in Stücken
  • 2 tomato, in Stücken
  • 1 garlic clove
  • 1 red chilli pepper, entkernt, in Stücken
  • 1 yellow pepper, in Stücken
  • 1 dl water
  • 2 EL olive oil
  • 2 EL white balsamic vinegar
  • 1 TL sugar
  • wenig pepper
  • 1.5 TL salt
To serve
  • 200 g watermelon, in Würfeli
  • 80 g feta, zerbröckelt
  • einige peppermint leaf

Gazpacho
Using a blender, puree the melon with all the other ingredients up to and including the pepper. Cover and chill for approx. 1 hr.
To serve
Pour the gazpacho into glasses, bowls or soup plates, top with melon cubes, feta and mint.
