Crunchy crumb topping
Heat the oil in a large non-stick frying pan. Stir fry the breadcrumbs and garlic for approx. 4 mins., season with salt, remove, set aside.
Heat the oil in the same pan. Fry the courgette slices for approx. 10 mins., stirring occasionally, season. Serve the courgette with the basil, cured ham and crunchy crumb topping.
