In a wide dish, combine the oil with all the other ingredients up to and including the salt, mix well. Add the spring onion greens, set aside.
Mix the aubergines and all the other ingredients with the reserved onions.
Charcoal/gas/electric grill: Grill the vegetables in batches over/on a medium heat (approx. 200 °C for approx. 7 mins. on each side. Place in the marinade, marinate until ready to serve.
