  • 1 kg cauliflower
  • 2 egg, beaten
  • a little pepper
  • 100 g grated Gruyère
  • 0.75 tsp salt
  • 2 corn cobs (approx. 150 g each), kernels sliced off
  • 2 red onion, cut into wedges
  • 4 tomato, cut into slices
  • 2 mozzarella (approx. 150 g each), torn
  • some oregano leaves
  • 2 tbsp olive oil
  • 300 g baby lettuce (e.g. cos, cut into sixths)
  • 2 tbsp white balsamic vinegar
  • a little pepper
  • 0.5 tsp salt

Grate the cauliflower straight into a bowl, stir in the eggs and cheese, season. Spread onto a baking tray lined with baking paper.
Mix the tomatoes with all the ingredients up to and including the mozzarella, divide onto the cauliflower base. Bake for approx. 25 mins. in the bottom half of an oven preheated to 220°C. Remove and scatter the oregano on top.
Mix the lettuce, oil and vinegar, arrange on top of the pizza, season.
