Allow 200 g to 250 g of cheese per person. Extra tip: buy different varieties of cheese, maybe with added pepper or garlic, smoked or chilli-spiced.

Which wines go with raclette?

You can't really go wrong with a wine from the same region as the dish you're serving. A Valais Fendant or a Chasselas from Vaud would be perfect, but light red wines like Gamaret-Garanoir Assemblage also go well with raclette cheese.

Which spices go with raclette?

Pepper, thyme and nutmeg are perfect with raclette. If you like a bit of spice, then add chilli, or if you prefer something sweet then go for a chutney – mango and fig are particularly good.

What sides do I need for the perfect raclette?

If you have a raclette set with a grill plate at the top, you can prep it with bacon strips. As the bacon slowly crisps up you'll be able to add various different vegetables like mushrooms, courgettes or aubergines. Pickled vegetables add a certain something to the dish, and alongside the silverskin onions and gherkins, boiled potatoes are indispensable for a good raclette.
