The sweet cherries growing on high trunk trees are best suited for distilling. With a lot of care, hand-picked, stemless cherries are macerated with the help of special equipment. The added pure yeast gently converts the sugar into alcohol and carbonic acid. Once fermentation is complete, the mash is stored for a few weeks to allow the characteristic cherry aromas to form. The fermented and stored mash contains between 6 and 8 % vol alcohol. The art of distillation lies in the clean separation of the inferior pre and post runs from the main run, i.e. the heart of the distillate. The distillate contains between 60 and 75 % alcohol by volume. Finally, the distillate is diluted to a strength suitable for drinking with demineralised water.
