Marsala is a dessert wine that is named after its Sicilian city of origin. Marsala is produced in a way that is very reminiscent of similar products (Port, Madeira, Jerez).
After the harvest, in which only the ripe grapes are collected, the winemaking follows, avoiding contact between must and pomace. The product is then poured into 3-4 hL (hectolitre) barrels, which are only two thirds filled.
The Marsala then undergoes the ageing process according to the Solera system: the barrels are stacked into levels, and approximately a third of the contents from the top barrel is transferred to the lower level. The operation is then repeated down to the bottom level. This way, different vintage wines are mixed to ensure a consistent flavour of the product.
