AOC designation for Valais reds made entirely from Pinot Noir or from an assemblage of red grape varieties grown in the Valais region, the must from which has to achieve a density of 78–83 degrees on the Oechsle scale (this figure is redefined each year). Assemblages must contain at least 80% Pinot Noir and Gamay, the majority of which must be Pinot Noir. Provins is a cooperative that was formed in 1930, in the middle of a difficult period for viniculture in general. The producers formed small groups to establish a company whose primary objective was to vinify its products. They also began developing a structure to market their products. Today, Provins is the leading manufacturer of Swiss wines, accounting for roughly 23% of production in Valais and 10% of Swiss production. More than 4,400 partners who supply grapes place their trust in the cooperatives and deliver around 10,000,000 kilos of grapes each year.
