An excellent year for Claire Villars' second domaine Classé. A seductivelilac and peony nose, crisp tannins and a long, fresh and juicy finish with red berry notes and black berries. The perfect embodiment of the appellation and vintage.
Age of the vines: 30 years. Harvest: manual. Vinification and ageing: vinification in stainless steel vats. Macerated for 3 weeks to a month during vinification. Malolactic fermentation for 25% in barrels. Traditional ageing of approximately 16 months in oak barrels (40% renewed every year). Egg whites collage.
