Its name comes from its salmon or bronze colour, similar to the colour of a partridge eye. This rosé is produced in the cantons of Neuchâtel and Valais, from Pinot Noir grapes that are pressed clear after a brief storage of the must. In Italy the same complementary method is used to produce Vin Santo rosé.
