Chic and exotic, mango was missing from Café de Paris' range of fruit flavours! This latest addition to the family innovates and is the first mango flavoured sparkling wine! Witness to French winemaking know-how, Café de Paris is a flavoured sparkling wine developed in the Bordeaux region. Café de Paris is the result of double fermentation: the first produces a white wine from grape juice byprocessing the juice's sugar content into alcohol: a classic white wine vinification. These base wines from different grape varieties are then assembled by our Cellar Master to form homogeneous batches, ensuring the consistent quality of our sparkling wines that form the basis of Café de Paris Blancs de Fruits. The second fermentation called prise de mousse is provoked by the additionof sugar and yeast to the wine base, followed by a four to six week maturing phase in closed tanks. After stabilization of the second fermentation by cooling action and filtration, the addition of natural extracts and aromas are then added.
