The appellation is situated on the left bank of the Rhône, between Orange and Avignon. The soil is characterized by large pebbles that store the heat from the generous Provincial sun during the day to return this heat at night. The height of the stones is 2 meters, below there is a bed of clay where the roots of the vines draw the water they need: an exceptional terrain. The white grapes havebeen planted in the more calcareous parts of the domain to benefit from the aromas, elegance and delicacy. It is a Mediterranean type climate with hot summers. The mistral chasses the moisture away, ensuring the perfect wine growing conditions. It is a mandatory manual harvest, allowing a selective sorting of the grapes. We attach great importance to this, qualitatively paramount point. Vinification, ageing and direct pressing in pneumatic presses. Natural settling in the cold (10-12°C) and light collage. A vinification at a low constant temperature between 14° and 16°. Fermentation time: about 4 weeks. To preserve the natural acidity and freshness ofthe aromas, malolactic fermentation is not carried out. Ageing on finished lees in vats for 4-5 months and then bottled early: in April of the year following the harvest.
