This beautiful 7.5 hectare domain is located at the heart of midi, on a hillside facing the lake in the village of Bougy-Villars. The oldest part of the house dates back to the sixteenth century. The Fischer family acquired the estate in the nineteenth century. The estate archives are the testimony of this famous vineyard's four centuries of history. The logs include details of the sugar content to the production methods from 1776 to date. Located in one building, around the stately home, the vineyard is predominantly comprised of the noble Chasselas grape with some Pinot Noir and Gamaret. All vines are grown according to strict integrated production methods in respect of the environment. Limited vine yields, hand harvesting and grape sorting in boxes to maintain the integrity of the berries. Very soft pressing to preserve the fruit. Vinified in its beautiful cellar in oak barrels afternatural sedimentation, the wine slowly ferments on lees to promote structure and complexity. Light filtration. Bottling on site.
