At Neudorf we prefer our Sauvignon to be dry, with concentration and length reflecting our low cropping rates, and a degree of mid palate texture and creaminess from a portion of (neutral) barrel fermentation. We also tend to release our Sauvignon late? the 2008 was released on February 1st 2009? this gives the wine time to soften and evolve.
