Pouilly-Fumé is a famous appellation. This Loire wine, which owes its name to a note of slight smokiness, that combines the biting and the freshness of a Sauvignon Blanc. The first part of the appellation refers to the town of Pouilly-sur-Loire, close to the vineyards. This wine is the epitome of a classic Sauvignon Blanc, a Sancerre neighbor on the opposite bank of the Loire Valley. The sauvignon varietal grows here on the most varied of soils, again where marl and limestone are dominant.
