Founded in 1988, the Pazo San Mauro winery is located in Salvaterra de Mino, at the heart of the Rias Baixas vineyard appellation,near the Atlantic coast, on the banks of the Minho river. The domain had semi-buried wine cellar built in 1990. It belongs to the Grupo Vinicola Marqués de Vargas under the leadership of Pelayo de la Mata, the current Vargas marquis. The family also owns two other wineries Marqués de Vargas (Rioja) and Conde de San Cristóbal (Ribera del Duero). This 30 hectare vineyard is managed with thegreatest respect for environmental protection and the vines are cultivated without pesticides (herbicides or insecticides). Besidesthe Albariño grape, Lureiro grape varieties, Torrontés and Treixadura are also grown. The fermentation of the Albarino Rías Baixas DO Pazo San Mauro is carried out in stainless steel tanks at a temperature between 17 and 18°C. Before bottling, the wine is first cooled and then filtered.
