This is a Pinot Blanc which combines flavour and body with freshness and elegance. Katrin Wind deliberately picks the grapes in several stages, so that she can produce a balanced, well-poised wine. It is fermented on full yeast, half in a steel tank and half in new and used barrels. Despite this vinification method, the winemaker does not want any roasted notes in her wine. And indeed, they are notably absent: the intricate nose has distinct fruity, spicy and slightly mineral notes. The wine is dry on the palate and relatively full-bodied, but without any heaviness or opulence, with good acidity and complex with a long and salty finish. This ambitious Pinot Blanc is the perfect pairing with white meat.
