Pauillac is the best known and most legendary of all the Médoc communities. It is home to three world-famous wineries: Lafite, Mouton and Latour, all "Premiers Grands Crus Classés".


Pauillac lies at the centre of the Médoc winegrowing area. Its wines were shipped to Bordeaux from its river port early on, and from there they were sent all over the world. Pauillac is home to numerous "Grand Cru Classés", the state-ordained term for the five groups (from the 1st to the 5th Grand Cru Classé) into which the top wines were divided in 1855 – including three of the five estates in the first category, Latour, Lafite-Rothschild and Mouton-Rothschild.


The gravel soils here are particularly deep and lean, which suits the Cabernet Sauvignon variety perfectly. Gravel is blended with loam and sand in the foothills of the undulating ridges.


Cabernet Sauvignon clearly dominates here, with over 60% of the yield – and it often makes up 70 to 80% of top wines. Merlot officially accounts for about 30% of the vineyard area, while less than 10% of it is planted with Cabernet Franc and Petit Verdot.


The special Pauillac soils, the high proportion of Cabernet and the noticeable oceanic influence make for unique wines – particularly powerful, full-bodied, at best almost majestic, which, however, often appear very angular and introverted in their youth and therefore absolutely need to mature.
