Raclette cheese is strongly acidic, so a wine that is low in acidity such as Fendant or Chasselas is a good accompaniment. But a Gewürztraminer is a suitable wine, although this combination may be too intensive for some people.
But what if guests prefer red wine? There’s no reason you shouldn’t serve it – on the contrary. Under certain circumstances red wine may even be a better accompaniment to melted cheese than white wine. The ideal wines come from Vaud, a Pinot Noir from Switzerland or a Shiraz from a warm climate.
