Truffles, those most heavenly of fungi, are intensely fragrant. They therefore need highly aromatic wines such as mature Merlot, Pinot noir, Nebbiolo and traditional Syrah. The best Nebbiolo wines, that is to say Barolo and Barbaresco, are served with pasta with white truffles. Wines for drinking with game dishes need not be quite so aromatic. Game is usually served with fairly hearty side dishes such as red cabbage and spätzle noodles. Juicy young, slightly rustic wines go well with this. Cornalin and Humagne rouge from Switzerland would be a very good match. But all medium-bodied and tannin-rich red wines such as Sangiovese and Cabernet Sauvignon pair well too.
