Wine for Chinese fondue – you can't go wrong with a wine buffet
Chinese fondue is Switzerland's most popular meal at Christmastime. Here are a few tips on wines to serve with it.
As with other dishes, it is the sauce with Chinese fondue that dictates what wine to choose. As several sauces are served with it, there are two possible strategies: you can either serve a passepartout, that is to say a wine that goes well with different sauces, such as a Barbera from Piedmont for instance, or a Californian Cabernet Sauvignon. Or you can offer a wine buffet with a variety of wines. You and your guests can then drink different wines with the various sauces. A wine buffet is always a hit because everyone's tastes are different and people can then find a wine they like.
