Today, the goals of Gerardo Cesari's company go even further: we want to keep our finger on the pulse of the market and supply it with elegant, harmonious and perfectly balanced wines. Tradition is balanced with new knowledge about winegrowing: we work sustainably and care about the environment; careful certification of our wine processing procedures provides our purchasers with assurance. We are developing continuously but without forgetting our roots and our history.
The wine cellar in Cavaion Veronese is designed to look after our wines. That is why we have a lot of space for what we see as the extremely important resting phase for our wines to make sure they can develop their characteristic structure and personality. Thanks to its natural features, the large underground ageing cellar creates a climate which has a well-balanced humidity and even temperatures where our wines can mature optimally. This cellar is not only used to mature wines in barriques and barrels; it is also the place where the wine is bottled and then aged for long periods.
The winery in San Floriano is used for the drying process which takes between four and five months. Here, the grapes are mashed, the wine fermented and matured for the first time. When they are delivered to the winery, the grapes are inspected thoroughly before the drying process starts. Ultramodern facilities ensure careful monitoring of the humidity and ventilation, and guarantee perfectly healthy grapes.
