Xavier Monnot is a tenth-generation winemaker. He uses his training in viticulture and oenology to press expressive wines that reflect their terroir, and the quality of the wines has soared under his leadership. Xavier Monnot sees himself as a traditionalist, but one who presses his wines with contemporary cellar equipment and up-to-date knowledge. He rejects the widespread practice of thinning out grapes in July, for example, instead breaking off shoots in April so that yields are regulated as early as possible. Right from the start this allows the vine to put all its energy into its grapes. The family domaine comprises 17 hectares of vines, from which 18 different wines are pressed. Xavier Monnot has studied the different sites of the family domaine in detail, and he brings out the character of each terroir in fresh, elegant wines. Rather than wines that win tasting competitions, the preference is for wines that inspire the desire for a second glass. The white wines, thoroughly refined and elegant, build up an exquisite tension on the palate with their crisp acidity and intense fruit. The reds are fermented with wild yeasts, entirely without stems, then macerated for three weeks and bottled with very light filtration. They all have ripe, juicy fruit components, combined with a firm structure and fresh acidity – which lends elegance and inspires the desire for more.
