Wines from the Domaine Dubreuil-Fontaine Père et Fils have featured in our range for many years and are characterized by consistency at a very high level – even in relatively difficult years. Christine Dubreuil is the fifth generation of her family to run the business, which comprises twenty hectares of top-quality vineyards in 22 appellations – an unusually large domaine for Burgundy. The family knows that quality starts in the vineyard, which is why the vines are cultivated in an integrated production process: the weather, plants and soil are carefully monitored and analysed in detail, after which fertilizers or sprays can be applied if necessary. Ripe, healthy grapes are the top priority.
Christine Dubreuil can often be found in the cellar, where she makes well-balanced, elegant and long-lasting wines with great sensitivity. Her new cellar, built in 1985 on three floors, permits gentle winemaking using gravity instead of pumps. The wines are fermented in open steel tanks with wild yeasts for added complexity. The tanks are cooled during fermentation to retain as much as possible of the wines' delicate aromas of fruit. New wood is used only with restraint, to add character to the terroir and allow the fruit to express itself to the fullest. The Dubreuil family see their wines as traditional products, created with care and attention in the vineyard and natural but modern vinification in the cellar.
