Bonnaire's style emphasizes the soft, creamy character of the Cramant terroir. The wines' malolactic fermentation gives them a buttery, ripe character even when they are young, but their acidity is always high – making them exotically rich in middle age, and nutty and full-bodied on reaching maturity.
