Ambonnay rivals Verzenay and Bouzy for the title of the best Grand Cru commune for Pinot noir. Ambonnay stands for soft, full-bodied wines with lots of ripe fruit and mild acidity, paired with elegance and a high degree of minerality.
The winery has almost five hectares of vineyards, and nearly all its production is sold to England – where champagne from H. Billiot has long been a star. Talking to Laetitia and tasting the wines quickly explains why.
The Billiots' vineyards are among the best tended in Champagne. Laetitia spends a great deal of time there with her father, tending the sites so expertly that they yield a harvest of healthy, very ripe grapes every year. The result is appealing, ripe-fruited wines that combine a plump body with precise, fresh acidity.
